A Gluten Free and Vegan Noodle Stir Fry is one of the quickest and easiest meals that I can whip up quickly after work and after picking my kiddos up from school. I purchase the main ingredients from Costco, including the Millet and Brown Rice Ramen Noodles. These noodles are both vegan and gluten free. I also grab the "Stir Fry Vegetable Blend" from Costco as well. The noodles take 4 minutes to cook. The veggies take 5-7 minutes per serving (4 1/2 cups). This is literally a 15 minute meal!
Ingredients:
3 cakes- Millet and Brown Rice Ramen Noodles
9 cups of Stir Fry Vegetable Blend
2 Tablespoons of olive oil
Liquid Aminos, or Gluten Free Hot Sauce to season- amount contingent on your taste

Directions:
-Prepare noodles according to package. Rinse with cool water and return to pot.
-Stir Fry Vegetables in wok or skillet according to package directions.
-Pour cooked stir fry vegetables into the pot with noodles and mix them together.
-Serve Gluten Free Noodle Stir Fry on Plate and add seasoning (i.e. liquid aminos or gluten free hot sauce.
-Enjoy!
-This large serving fed my family of 5 with leftovers ready for another meal on tomorrow or for someone's lunch. My daughter suggested adding a sprinkle of hot sauce instead of liquid aminos (gluten free), which actually tasted pretty good! Season as you like. In the past, I used raw veggies to prepare this meal, however using a stir fry blend made cooking time even quicker.
