This week's long lasting meal was Veggie Chili. It's actually Classic Black Bean and Veggie Chili. I really wanted a hearty meal that was packed full of vegetables. I tripled the recipe, and this pot of chili lasted 5 days for lunch and dinner for my family. My hubby and kiddos eat meat and I don't. I thought this chili was fabulous and chucked full of flavor. My kids said "Mom this doesn't taste like regular chili". So they insisted on having chili dogs. I poured this mixture over their hot dogs. At least they still got tons of veggies including, onions, green bell pepper, garlic, carrots, zucchini, corn, diced tomatoes, and black beans. I used diced tomatoes with chile's. This dish was actually a little spicy. I loved it! I found the recipe for this in one of my Vegan cookbooks titled "Appetite for Reduction" by Isa Chandra Moskowitz. It tasted like regular, great chili sans the meat.
The hardest part about this recipe was chopping up all the vegetables. I really need to buy a chopper. I even looked over at my blender at one point and considered using the chop function there, and then I thought about how I would then be in need of a new blender. LOL! It took me an hour to chop all the veggies to triple this recipe. One things for sure, it was definitely well worth it. Here's to Veggie Chili! My comfort food of choice.
