Hey foodies, my weekly trial of a new recipe was Vegan Mushroom Carnitas this week! Someone shared this recipe on Facebook. I of course tweeked it a little, but for the most part if you have tortillas, mushrooms, onions, garlic, oregano, and cumin on hand, you're ready! I added a few extras to the recipe including cilantro, vegan cheese, and avocado. Yum! This was delish in it's purest form! This recipe passed the kid test in 1 out of 3 trials ( one of my twin sons enjoyed them, but my daughter hates mushrooms, and my other son was like "naw"), but hey "I loved them"! I also cooked some corn on the cob and instead of topping with vegan butter, I spread 1 teaspoon of vegenaise across it. OMG! I was in vegan heaven! Excuse that picture, I couldn't help but taste it first. I tried to crop the bite out because I forgot to snap a pic before tasting. LOL!
By the way, today is Prince's birthday. He would have been 59 years old today! I felt happy to celebrate his birth on today, so opposite of the way that I felt on the anniversary of his death. I'm glad that he was born and during his time here he made great music! I wore purple today. I also listened to V103 on my lunch break and every free moment that I got, because they played nothing but Prince music all day. Prince was also reportedly vegan. Some sources state that he was vegetarian. Regardless of what his exact diet choices were, he appeared to have incorporated healthy food options frequently. Nonetheless, I celebrated him by eating healthy, listening to his music, dancing to his music, and wearing purple. Today was a great day!
