I've been vegan since November due to trying to be as healthy as I can be. To each his/ her own, but it's working for me. I love to eat, and I love flavorful food, so if I'm vegan believe me I've found some ways to eat healthy and enjoy my meal all at the same time! One of my favorite dishes, which I made for the first time is Quinoa Taco Meat. OMG! I found this recipe on yummly and these tacos were amazing! The color and texture of the quinoa was similar to meat. I also made a cucumber, tomato, and avocado salad and actually placed the mixture on top of the quinoa to seal the deal! I then added a little fresh spicy green salsa to top that off. The links to the recipes are below. I love "Yummly". You can sign up for free via email and/ or download the free app to get recipes to fit the types of foods that you would like to receive recipes for. I often search for vegan recipes to replace foods that I previously enjoyed.
P.S. My children loved this! One of my son's said "Mom, this is good. How do you keep doing this? This tastes just as good as meat". My daughter stated: "Can you make these again"? This veggie meal is kid approved! They just don't realize that it was packed with protein, fiber, magnesium, and veggies.
