My latest vegan meal was a veggie burger that I made from scratch! These are so simple to make and so chuck full of flavor. Black beans, corn, cilantro, garlic, ketchup, and black pepper were just a few of the ingredients that I added to make this tasty burger. I flavored it with 2 teaspoons of veganaise on my bread, vegan cheese, and a spoon of ketchup. You can probably tell that I purchased the chunk of vegan cheddar cheese instead of the pre-sliced ones. I need to find my cheese slicer. LOL! Even though it's pieced together here, it tasted just as good as a perfectly sliced piece. I didn't add any salt to the recipe and it was just as good! I didn't make the mayo and siracha spread either, however it was still very well seasoned. It was so flavorful that I skipped the lettuce, after all it was full of veggies anyways. This was my dinner yesterday, along with a baked sweet potato. Sweet potatoes are naturally sweet so I didn't add anything extra.
I love Yummly's recipe for Spicy Black Bean Burgers. The recipe said that it makes 6 servings, however I actually made 8 burgers with this recipe, and minus the extra salt I was able to reduce the calories even more. I evened this out by having a salad for lunch, and I promise this was awesome.
