Can you share a sample vegan meal plan for a day?
You all know that I've been vegan for 5 months and dropped some pounds and toned up some. I'm glad that my recent post sparked a question about what I eat in a typical day. I get many ideas from vegan cook books, such as Forks Over Knives or online. Here's what one day of meals look like for me.
Before Breakfast Drink- 16 ozs. Water and then 6 ozs. of green tea sweetened with 1 teaspoon of stevia.
Breakfast: 1 serving of Steel cut oatmeal topped with 1/3 cup of frozen blueberries and a sprinkle of cinnamon.
Post breakfast and before lunch- drink 16 ozs. of water
Mid-morning snack- 1 cup of fresh cubed watermelon
Lunch- Grilled Portabella Mushroom Sandwich served with 1 slice of vegan cheese, and toasted wheat bread, and 1 tablespoon of vegan mayo
Mid-Afternoon Snack- 10 slices of fresh cucumber
Mid-Afternoon Drink anytime before dinner- drink 16 ozs. of water
Dinner- 1 serving of Coconut Lime Rice With Red Beans and Mango, and also Cauliflower Bites (Vegan Buffalo Wings)
Evening Drinks anytime before bed- 16 ozs. of water, 6 ozs. of hibiscus tea- no sugar or sugar substitute added
Snack Before Bed- Healthy pop popcorn plain or sprinkled with hot sauce (just because I like a little spice).
Daily I tell myself: 1. Remember your goal weight. 2. Eat to Live. 3. Diminish sugar. 4. Watch your portion sizes. 5. Drink at least 64 ozs. of water a day. 6. Be active.
